Tomato and Lentil Soup

This is an easy to make soup with ingredients that I always have in the house. It is full of flavour and great for a cold winter's night.

Serves: 4

  • 1 tablespoon vegetable oil
  • 2 large onions
  • 2 cloves of garlic
  • 1 (400g) tin diced tomatoes
  • 8 basil leaves
  • 1/2 tablespoon cayenne pepper
  • 850ml stock
  • 60g red lentils
  • 1 pinch salt and coarsely ground black pepper, to taste

Preparation:5min  ›  Cook:35min  ›  Extra time:40min  ›  Ready in:1hour20min

  1. Heat the oil in a saucepan and sweat the onions until soft.
  2. Add the garlic, tomatoes, basil, cayenne pepper and stock. Bring to the boil then simmer over a low to medium heat for 15-20 minutes.
  3. Add the lentils and continue to cook until the lentils become soft.
  4. Pour the soup into a blender and blend until the soup reaches your desired consistency.
  5. Return the soup back onto the cooker and cook over a low heat for a further 2-3 minutes.
  6. Add salt, pepper and/or basil, to taste.

Delicious and easy.. had to use dried basil since fresh is still pretty $.. will try with fresh in summer - 09 Apr 2015

Very very good ! It worked perfectly for me, loved it. Maybe a bit more chili would have been better, but it depends of how spicy you want your soup. Easy, cheap, must-try for a student ! - 10 Oct 2011
