    The use of fresh pawns and lemon makes the dish refreshing and light. Ideal as an entree or main at a dinner party.

    Ingredients
    Serves: 1 

    • 100g spaghetti
    • 1 dash olive oil
    • 1 lemon, zested
    • 1 clove garlic
    • 10 medium prawns, cooked and shelled
    • 1 pinch salt and pepper, to taste
    • 1 sprig basil, finely diced

    Directions
    Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Cook the pasta in plenty of salted water until al dente. Drain and reserve a little cooking liquid.
    2. While the pasta is cooking warm the olive oil in a saucepan over low heat. Add the lemon zest and let cook for about 5 minutes. Sieve the oil and return to saucepan.
    3. Add the garlic and prawns then cook about 3 minutes stirring occasionally. Season with salt pepper to taste.
    4. Add the cooked pasta with just a little bit of the cooking liquid. Toss together thoroughly with the fresh basil; serve.

    This was lovely ! Very light and fresh so much flavour with very little ingredients. I added some chilli flakes to the prawns and tossed lemon juice through the pasta topped with parmigian cheese - 25 May 2015
