The South West of the Unites States uses many unique flavours and spices. Chillies, oregano and cumin are common. This is a seasoning blend that is typical for the area and can be used on any meat you are barbecuing.

2 tablespoons chilli powder
2 tablespoons paprika
1 tablespoon ground coriander
1 tablespoon garlic powder
2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon ground cayenne pepper
1 teaspoon crushed red chilli flakes
1 teaspoon freshly ground black pepper
1 teaspoon dried leaf oregano (Mexican if available)
1/4 teaspoon cocoa powder
a good pinch ground cinnamon

Combine all ingredients.
For a finer, more even texture, you can pulse the ingredients in a blender or food processor (be careful not to breath in the dust when you open the lid).
Store in an airtight glass jar. Maintains freshness about 6 months.
