Pickled Cucumber with Smoked Salmon

Pickles and fish go together very well, as you can see in countless Japanese dishes. This is very easy to make.


Serves: 4 

  • 1/2 cucumber
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 pinch sugar, to taste
  • 1 small head of lettuce, sliced
  • 4 slices smoked salmon

  1. Peel the cucumber and using the vegetable peeler then slice it into very fine strips. Discard the seeds when you get to them.
  2. In a bowl mix together the vinegar, lemon juice and sugar until the sugar is dissolved. Add the cucumber and set aside; leave for 5 minutes.
  3. Arrange the lettuce and salmon on plates and top with the pickled cucumber; serve immediately.
