Pork, Apple and Cider Casserole

    The sweetness of the apple competes with the tartness of the cider in this beautiful pork chop slow cooker casserole.

    Serves: 4 

    • 1 pork chop per person
    • 2 to 3 apples, sliced
    • 1 to 2 onions, sliced
    • 1 pinch fresh or dried sage leaves, diced, to taste
    • 500ml cider or stock
    • 1 to 2 teaspoons wholegrain mustard, optional

    1. Layer all the ingredients in your slow cooker, onions then apples and then chops. Sprinkle the sage leaves in between each layer and over the top.
    2. Add the mustard to the cider and mix. Pour over to cover the ingredients.
    3. Cook in the slow cooker on low for 8 hours. Serve with creamy mash and vegetables.
