Slow Baked Chicken

    Cooked at only 160 degrees C the chicken and vegetables are baked together slowly maximising tenderness and flavour.

    Serves: 2 

    • 4 skinless chicken thighs
    • 4 unpeeled garlic cloves, to taste
    • 1 onion, halved
    • 1/2 lemon, halved again
    • 1 sprig fresh thyme or lemon thyme
    • 400g new potatoes, washed and left whole unless huge
    • 150ml stock or white wine
    • Optional
    • carrots, halved, peeled if needed
    • capsicum, deseeded and quartered
    • mushrooms, whole
    • large florets cauliflower

    1. Preheat oven to 160 degrees C.
    2. Take a large roasting tin and put all ingredients in. Season and pour over stock or wine.
    3. Get your hands in and mix everything together and spread it all out.
    4. Cover tightly with foil and put in oven for 2 hours then serve.
