Basic and Simple Chocolate Mousse

    A simple chocolate mousse recipe that creates a rich creamy mousse that can be enjoyed by the whole family.

    Serves: 2 

    • 50g dark chocolate
    • 1 tablespoon water
    • 1 egg yolk, lightly whisked
    • 1 1/2 teaspoons vanilla essence
    • 125ml thickened cream
    • 1/2 tablespoon icing sugar

    1. In a small heavy saucepan melt chocolate with water over low heat; stir until smooth.
    2. Stir a small amount of hot chocolate mixture into egg yolk; return all to the pan, stirring constantly.
    3. Cook and stir for 2 minutes or until slightly thickened. Remove from the heat then stir in vanilla. Cool stirring several times.
    4. In a mixing bowl whip the cream until it begins to thicken. Add sugar then continue to beat until soft peaks form.
    5. Fold in cooled chocolate mixture. Cover and refrigerate the chocolate mousse for at least 2 hours.
