A simple chocolate mousse recipe that creates a rich creamy mousse that can be enjoyed by the whole family.

- 50g dark chocolate
- 1 tablespoon water
- 1 egg yolk, lightly whisked
- 1 1/2 teaspoons vanilla essence
- 125ml thickened cream
- 1/2 tablespoon icing sugar

- In a small heavy saucepan melt chocolate with water over low heat; stir until smooth.
- Stir a small amount of hot chocolate mixture into egg yolk; return all to the pan, stirring constantly.
- Cook and stir for 2 minutes or until slightly thickened. Remove from the heat then stir in vanilla. Cool stirring several times.
- In a mixing bowl whip the cream until it begins to thicken. Add sugar then continue to beat until soft peaks form.
- Fold in cooled chocolate mixture. Cover and refrigerate the chocolate mousse for at least 2 hours.
