Easy Baked Rice Pudding

Four ingredients (rice, sugar, milk and mixed spice) are combined and baked in the oven; simple but still delicious.
50g pudding rice
25g caster sugar
2 1/2 cups (625ml) milk
2 teaspoons mixed spice
- Preheat oven to 150 degrees C. Butter an ovenproof dish.
- Add rice and sugar together then place in dish. Add milk. Place in oven and bake for 1 hour.
- After 30 minutes give a good stir and add mixed spice.
- Return to oven for final 30 minutes or until desired consistency is achieved.
So easy - and just as rice pudding should be. Just a handful of ingredients and a sprinkling of spice. I used vanilla sugar, full cream milk and cinnamon. Delish!

This is a very easy, simple recipe for rice pudding. I prefer my rice pudding a little more custard-y. But this was good.
