Zucchini Quiche Squares

This simple savoury zucchini quiche is cooked in a square tray and cut into squares but it could just as easily be done in the traditional round dish.


Serves: 16 

  • 3/4 cup (90g) plain flour
  • 1 tablespoon baking powder
  • 1 teaspoon caster sugar
  • 1 teaspoon salt
  • 50g Parmesan cheese, grated
  • 1 tablespoon parsley, finely diced
  • 1/2 tablespoon oregano, finely diced
  • 1 tablespoon basil, diced
  • 4 eggs
  • 125ml olive or vegetable oil
  • 1 onion, diced
  • 450g grated zucchini, squeezed dry

  1. Preheat the oven to 180 degrees C.
  2. In a bowl combine the flour, baking powder, sugar, salt, Parmesan cheese, parsley, oregano and basil.
  3. Beat together the eggs, oil and onion. Fold into dry ingredients just until combined. Fold in the zucchini.
  4. Turn into a greased 20x30cm baking tray. Bake for 30-35 minutes or until golden brown and set.
  5. Cut into squares to serve.
