Stuffing chicken breasts with sausage meat is not something that would normally come to mind but it tastes great and is easy to cook.

As an alternative to ready stuffed joints I made these for Sunday lunch - they went down a treat, were really tasty and easy to prepare. I used flavoured sausages and just added a few sliced spring onions - they worked really well and didn't detract from the chicken or bacon flavours at all.
