    Stuffing chicken breasts with sausage meat is not something that would normally come to mind but it tastes great and is easy to cook.

    Serves: 4 

    • 4 pork sausages
    • 4 spring onions, diced
    • 1 pinch dried sage
    • 4 chicken breasts
    • 4 rashers bacon
    • 1 teaspoon oil

    Preparation:30min  ›  Cook:25min  ›  Ready in:55min 

    1. Preheat the oven to 200 degrees C.
    2. Squeeze the sausage meat out of the skins and mix with the spring onions and sage. Season to taste with salt and pepper.
    3. Cut each chicken breast almost in half and open out like a book.
    4. Stuff the sausage meat inside then close up and wrap each one in a rasher of bacon.
    5. Place in a roasting tin and drizzle with oil.
    6. Cook for 25 minutes then serve.
