Sausage and Rice Stew

This is a simple stew that uses sausages, rice and a variety of vegetables like mushrooms, peas and corn to create a risotto like dish with half the cost and hassle.


Serves: 4 

  • 250g sausages
  • 1 tablespoon cooking oil
  • 1 medium onion, diced
  • 75g rice
  • 100g mushrooms, sliced
  • 50g garden peas
  • 50g corn kernels
  • 1 chicken stock cube
  • 375ml hot water
  • 1 tablespoon Worcester sauce
  • 1 pinch salt and pepper, to taste

  1. Gently fry the sausages in the oil until cooked and brown. Put them on a plate.
  2. Add the onion and rice to the frying pan. Fry for about 7 minutes; keep stirring so that it does not stick.
  3. Add the mushrooms, peas, corn kernels, cooked sausages, stock cube, water, sauce and seasoning.
  4. Simmer very gently for about 12 minutes until the rice is tender and all the water is absorbed.
