This is a sausage stew that is very similar to a chilli con carne except that it is made with sausages. Thus it has sausage but also kidney beans, tomatoes and chilli flavourings. It can be served with mashed potatoes or crusty bread.

Serves: 4

  • 1 tablespoon oil
  • 1 clove garlic, crushed
  • 10 sausages
  • 1 (400g) tin diced tomatoes
  • 1 (400g) tin kidney beans
  • 1 red capsicum
  • 1/2 cup tomato puree or passata
  • 60g mushrooms
  • 1 dash bbq sauce, to taste
  • 1 dash chilli sauce, to taste
  • 1 dash red wine, to taste

Preparation:10min  ›  Cook:20min  ›  Ready in:30min

  1. Fry the garlic in the oil for a minute or two then add the sausages and cook until they are golden.
  2. Cut the sausages into smaller pieces and continue to cook for a further few minutes.
  3. Turn the heat down to low and add the tomatoes, beans, capsicum, tomato puree and mushrooms. Stir and simmer for a while before adding bbq sauce, chilli sauce and wine.
  4. Simmer for 10 minutes until sausages are cooked through and beans are soft.

Not something I would normally cook, but it came out great. I used mild chilli sauce and added some chilli powder, just right. Giving it 5 stars for being a great cheap meal. Yum. We call it Chilli con sausage. - 23 Oct 2011
