    This is a simple curried sausage recipe with mushrooms and potatoes that is popular through all the generations of our family.

    Ingredients
    Serves: 4 

    • 6 medium potatoes, cut in half
    • 10 pork sausages
    • 250g mushrooms, sliced
    • 4 teaspoons oil
    • 1 large onion, sliced
    • 3 teaspoons curry powder
    • 2 cups (500ml) boiling water
    • 4 teaspoons tomato sauce
    • 2 teaspoons tomato paste

    Directions
    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Add the potatoes to a saucepan of boiling water and simmer until soft but not crumbling.
    2. Brown the sausages however you prefer; grill or fry. Put to one side. Once cooled slice into small bite-sized pieces. Fry mushrooms until softened.
    3. In a large saucepan add oil then onions and fry until clear and soft. Add the curry powder and stir for a further minute. Add the potatoes and stir until coated in the paste. Add the sausages and mushrooms then stir again.
    4. Cover the ingredients with boiling water, tomato sauce and tomato paste then stir. Simmer for 10 minutes. The potatoes should have just started to break down to create a nice thick sauce.
    5. Leave for at least 30 minutes then serve the curry with basmati rice.

    What a fantastic, simple but tasty dish. I used this recipe but bunged all the ingredients in the slow cooker (although replaced the half litre of water for 150ml of chicken stock) and left it on low all day. Family loved it  -  06 Mar 2013  (Review from Allrecipes UK & Ireland)
