Eat these amazing muffins while they are still warm to get the gooey chocolate/marshmallow experience.


Serves: 12 

  • 230g flour
  • 1/4 cup (60g) cocoa powder
  • 1 tablespoon baking powder
  • 1 pinch salt, to taste
  • 110g caster sugar
  • 100g white chocolate chips
  • 60g mini marshmallows
  • 1 egg
  • 1 cup (250ml) milk
  • 6 tablespoons cooking oil

  1. Sift flour, cocoa, baking powder and salt into a large mixing bowl.
  2. Stir in sugar, chocolate chips and marshmallows.
  3. Whisk egg in bowl.
  4. Pour milk into jug adding cooking oil and egg; hand whisk.
  5. Make a well in the centre of dry ingredients and pour all the liquid in; combine but do not over-mix.
  6. Spoon into muffins tins and bake at 200 degrees C for 25 minutes.
