Roasted Pasta Sauce

    Roasted red capsicum, tomatoes, onion and garlic seasoned with thyme is blended to create a rich red pasta sauce.

    Serves: 4 

    • 1kg tomatoes, same size
    • 2 red capsicums, quartered
    • 1 red onion, cut in eighths
    • 6 cloves of garlic, peeled
    • 2 bay leaves
    • 2 sprigs of thyme
    • 1/4 cup (60ml) olive oil
    • 1 pinch sea salt and black pepper, to taste

    1. Preheat oven to 150 degrees C.
    2. Place tomatoes, capsicum and onion into a large shallow roasting tin and nestle the garlic cloves and herbs amongst them.
    3. Pour over olive oil and turn to coat thoroughly. Season to taste with sea salt and black pepper.
    4. Place in the oven and roast for 2 hours.
    5. When done cool slightly then blend in a food processor.

    Delicious sauce. As I also grow my own tomatoes, I was looking for a recipe that uses "fresh" rather than tinned. This is definitely a keeper.  -  26 Jul 2013  (Review from Allrecipes UK & Ireland)
