    Although an unusual way to cook broccoli, roasting creates a tasty result, particularly when the edges get a bit crunchy and the stalks are still firm.

    Serves: 4 

    • 500g broccoli, trimmed
    • 2 tablespoons olive oil
    • 3 tablespoons Parmesan
    • 1 clove garlic, crushed
    • 1 pinch salt and freshly ground pepper, to taste

    1. Preheat the oven to 200 degrees C. Line a baking tray with baking paper.
    2. In a shallow baking dish or bowl combine the olive oil, Parmesan, garlic, salt and pepper. Stir to combine. Add the purple sprouting broccoli and toss to coat.
    3. Place the broccoli in an even layer across the prepared baking tray. Roast in the oven until cooked and the edges are slightly crispy; about 10 to 15 minutes.
