Rhubarb and Berry Jam


    This is a delicious jam combining rhubarb with blueberries. You can use another type of berry rather than blueberries if you prefer.

    Serves: 32 

    • 700g fresh rhubarb, diced
    • 400g fresh blueberries
    • 400g caster sugar
    • 2 teaspoons grated orange zest
    • 75ml orange juice
    • 125ml water

    1. In a saucepan combine the rhubarb, blueberries, sugar, orange zest, orange juice and water.
    2. Bring to the boil then cook over medium-low heat for 45 minutes stirring occasionally or until thick. It will thicken more as it cools.
    3. Ladle into hot sterile jars and seal with lids and rings. Store in the refrigerator.
