    This is a very quick and simple way to have a Thai green curry in your house for dinner. The focus is on the sauce, you pick your meat and vegetables.

    Serves: 4 

    • Curry Sauce
    • 1 (400ml) tin of coconut milk
    • 6 tablespoons coriander leaves
    • 1/2 teaspoon coriander powder
    • 1/4 teaspoon cumin powder
    • 1/4 teaspoon powdered ginger
    • 1 dash soy sauce, to taste
    • 2 cloves garlic, crushed
    • 2 small green chillies, seeded and diced
    • 1 lime, juiced and zested
    • Vegetables and Protein
    • 1 small onion
    • vegetables, such as mushrooms, carrots, corn kernels, peas or zucchini
    • 4 small chicken breasts, or equivalent quantity of tofu, beef, fish, prawns or a combination

    1. Curry Sauce: Place all of the ingredients for the sauce into a blender and blend.
    2. Curry: Stir fry onions and meat then add the vegetables and cook for 2-3 minutes.
    3. Pour in the curry sauce and simmer for 20 minutes or until all ingredients are cooked and have absorbed the flavour of the sauce.
    4. Serve with basmati rice.

    Excellent recipe. Made it last night and got compliments from the family. I changed the recipe to add about 3 tablespoons of chopped lemongrass and also added 2 teaspoons of salt. It is super-easy to make and a wonderful shortcut to make a great tasting dish! - 30 Jun 2013
