Quincy Jam can be served with sweets as a compote or savoury with a leg of lamb, lamb chops or pork. It is for immediate use however not long term storage.
1kg quince, peeled and thinly sliced
600g white sugar
- Combine the quince, sugar and water and bring to the boil in a large saucepan. The quince should be just covered with water.
- Continue at a rolling boil until the quince is transparent. Allow to cool before serving. Store in the fridge or freezer.
