This recipe creates a succulent chicken breast coated in tomato and cheese. Baked in the oven it is a healthy choice for your next dinner, especially served with steamed vegetables.


Serves: 4 

  • 4 medium size chicken breasts
  • 100g concentrated tomato paste
  • 2 tablespoons lemon juice
  • 1 tablespoon Italian seasoning
  • 1 teaspoon oregano
  • 2 tablespoons water
  • 100g grated Mozzarella cheese
  • 100g grated cheddar cheese

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat oven to 200 degrees C.
  2. Place the chicken breast in a small roasting tin lined foil and brushed with cooking oil.
  3. Mix the tomato paste with the herbs, lemon juice and water. Spread over the chicken breasts coating them well.
  4. Mix the two cheeses together and sprinkle over the chicken breasts.
  5. Place in the centre of the oven and cook for approximately 30 minutes or until cheese is golden and chicken cooked through.
