Easy Quick Banana Cake

Every now and then you have those left over bananas that need to be eaten. This is a quick banana cake recipe that tastes great.

Ingredients

Serves: 8 

  • 110g butter or margarine
  • 185g sugar
  • 2 eggs
  • 2 large or 3 medium bananas, mashed
  • 230g self raising flour

Directions

Preparation:10min  ›  Cook:1hour10min  ›  Ready in:1hour20min 

  1. Heat the oven to 180 degrees C. Grease a large loaf tin.
  2. Cream the butter and sugar together. Mix in the eggs. Stir in the mashed bananas. When combined mix in the flour.
  3. Scrape cake mixture into the loaf tin and bake for 40 minutes then lower the temperature to 150 degrees C and cook for a further 30 minutes.
  4. Let cool on a cake rack.
