    Couscous is cooked in vegetable stock before being accompanied by dried fruit. This recipe uses sultanas and apples but you can use whatever you feel like, apricot, prunes, berries, etc.

    Serves: 5 

    • 175g couscous
    • 350ml vegetable stock, hot
    • 2 tablespoons extra-virgin olive oil
    • 40g sultanas
    • 40g dried apples, diced
    • 1 tablespoon fresh parsley, finely diced

    1. Put all the couscous in a bowl and add the hot stock to it. Stir for 30 seconds then cover with a towel and leave for 5 minutes. After a further 2 minutes fluff with a fork.
    2. Drizzle over olive oil and stir in the sultanas, dried apples and parsley. Either serve immediately or cool and reheat when ready to serve.
