The apricots are soaked overnight in port before being wrapped in bacon. This process creates a mature taste for such a simple process. You can serve as nibbles or add a few to a plate to create a meal.


Serves: 8 

  • 24 dried apricots
  • 150ml port
  • 12 rashers smoked bacon
  • 30ml oil, for brushing

  1. Put the apricots in a lidded bowl with the port and soak overnight.
  2. Halve the bacon rashers longways. Place apricot at one end of bacon rasher and roll up. Place in lightly greased oven dish.
  3. Brush with a little oil and cook at 200 degrees C for 20 minutes or until golden.
