Heat oil in the wok to a high temperature then add garlic slices and cook them until they are light brown. Then add pork mince to the dish. Stir in the fish sauce, sugar and lime juice.
Stir fry until the meat is cooked. Spread the meat evenly across the wok, add eggs on top of meat. Using a spatula, break the egg yolk and spread them on top of meat. At this point, don't stir or turn the meat over. Let the egg sit for about a minute and then using spatula turn over the meat with egg on top, so the top of the egg will cook.
After the egg is cooked break apart the meat and turn over again. This time, transfer to a serving dish and garnish with spring onion.
