Poached Pears and Amaretto Sauce

    Warm pears with a mascarpone sauce. Looks very impressive; perfect for a special dinner or dinner party. Serve with a dessert wine.

    Serves: 2 

    • 2 medium large pears, peeled, cored and halved
    • 1 vanilla pod, split longways
    • 1 lemon, juiced
    • 100g brown sugar
    • 3 strips orange zest
    • 1 cup (250ml) water
    • 100g Mascarpone cheese
    • 2 small scoops vanilla ice cream
    • 2-3 tablespoons Amaretto liqueur
    • 1/2 teaspoon ground nutmeg

    1. Peel and carefully cut the pears in half. Remove the core but leave the stalk. Soak in lemon juice to prevent pears from discolouring.
    2. Mix the sugar, vanilla pod, orange zest and water in a saucepan and stir over medium heat until sugar dissolves. Bring to the boil and continue boiling for 5 minutes. Add the pears and bring to the boil then reduce heat and simmer covered for 10 minutes or until pears are soft.
    3. In a mixing bowl whisk together the Mascarpone, ice cream, Amaretto and nutmeg until smooth and creamy. Put in fridge until pears are done.
    4. Remove pears from liquid and allow to cool 1 minute before serving. Divide the sauce into 2 bowls and arrange the pear halves on top.
