Pineapple Lime Jam

    This is a lovely pineapple jam that is not only good on toast but great as filling in cakes and biscuits for something a little bit different.

    Serves: 20 

    • 1 medium pineapple
    • 1 cup (250ml) water
    • 2 cups (440g) jam sugar
    • 2 limes, juiced

    Preparation:15min  ›  Cook:1hour45min  ›  Ready in:2hours 

    1. Grate the flesh of the pineapple. There should be about 2 cups.
    2. Put into a saucepan with water and cook for about half an hour until soft.
    3. Add sugar and lime juice then cook until thick; about 45-60 minutes.
    4. Spoon into sterilised jars and keep in fridge.

    As I am Growing my own pineapple and limes I googled "Pneapple Jam", and came across this one and an identical one from Martha Stewarts Website in America. I haven't tried it yet but intend to make a batch tomorrow. It seems easy enough except for the 45 -60mins it's going to take to be thickened or setting point?  -  22 Sep 2012


    I thought this was a lovely recipe. Very easy to make & tasty too. I have uploaded my picture so you can see. The only thing that I would change is the amount of sugar as I found the jam to be rather sweet.  -  18 Oct 2009  (Review from Allrecipes UK & Ireland)
