Vanilla Fairy Cakes

    Vanilla fairy cakes or cupcakes are an easy and simple treat for kids, these ones are so easy they could help you cook and decorate them.

    Serves: 12 

    • 125g caster sugar
    • 1 cup (125g) self-raising flour
    • 125g softened butter
    • 2 eggs, whisked
    • 2 tablespoons milk
    • 1 tablespoon vanilla essence

    Preparation:20min  ›  Cook:20min  ›  Extra time:40min  ›  Ready in:1hour20min 

    1. Preheat oven to 180 degrees C.
    2. Cream butter and caster sugar. Add egg bit by bit and mix well.
    3. Place 12 patty cups into cupcake tray. Spoon the mixture into the cases and place in oven 15-20 minutes or until golden.
    4. Fold in self raising flour then mix until smooth. Add milk and mix. Add vanilla essence and mix.
    5. Leave to cool. Add icing sugar and toppings if wanted.

    I think steps 3 & 4 are the wrong way round. I added the flour, milk and vanilla BEFORE putting the mixture into the patty cases and baking. They took less than 15 minutes to cook.  -  20 Oct 2017


    Great recipe. I made exactly as written, using my Magimix to cream the butter, sugar, then eggs. I stirred the rest in by hand. It does not make large muffin sized/shaped cupcakes, but does make 12. I used this buttercream icing recipe to ice the cupcakes. Perfection together!  -  28 Jul 2016
