    Tuna Steaks with Pepper Sauce

    The tuna is perfectly matched with the creamy pepper and mushroom sauce. I serve with simple boiled or mashed potatoes and green vegetables.

    Serves: 2 

    • 1/4 cup green, red and black peppercorns
    • 2 large tuna steaks
    • 60g butter
    • 200g sliced mushrooms
    • 1 cup (250ml) milk
    • 1 tablespoon flour

    1. Coarsely crush the peppercorns.
    2. Pat the peppercorns into the tuna steaks.
    3. Add a little olive oil in a frypan when hot add the tuna steaks and cook over a medium low heat for 4 minutes. Turn the steak and cook for a further 4 minutes. The tuna should be slightly pink inside still when finished.
    4. Remove the tuna steaks form the frypan; keep warm.
    5. Add butter to the frypan, once melted add the mushrooms until cooked then move to one side.
    6. Tip the frypan so the butter is on one side then add the flour and mix to a paste. Add some whole peppercorns and milk gradually making the paste thinner into a sauce.
    7. Mix in the mushrooms then simmer for 2 minutes. This should give a nice peppery mushroom flavour.
    8. Pour over the tuna steaks and serve.
