Peach and Raspberry Trifle

    This is a simple trifle that is filled with peach and raspberries. It looks great in its layers of jelly, custard and cream.

    Serves: 8 

    • 150g sponge fingers
    • 2 tablespoons peach schnapps
    • 1 peach, stoned and diced
    • 225g fresh raspberries
    • 1 packet raspberry jelly
    • 450ml custard
    • 1 1/4 cups (310ml) thickened cream
    • chocolate shavings, to taste

    1. In a large bowl lay out the sponge fingers until they cover the bottom then pour over the peach schnapps and top with the fruit.
    2. Make the jelly according to pack instructions and pour over the fruit and sponge; leave in the fridge overnight to set.
    3. Make custard according to pack instructions then leave to cool then pour over the jelly.
    4. Whip the cream until it is stiff then spread over the custard and top with chocolate shavings.
