Bacon and Cheese Bake

    This is a simple four ingredient bake that is perfect for busy nights. Layer bacon, onion, cheese and potatoes then bake.

    Serves: 4 

    • 8 rashers bacon, diced
    • 1 red onion, diced
    • 400g mild cheddar cheese, grated
    • 500g white potatoes, thinly sliced

    1. Preheat oven to 190 degrees C.
    2. Using a shallow ovenproof dish layer the ingredients in the order listed using about a quarter of the amount each time so that you end up with about four layers. Once you have reached the desired amount pour a little water into the dish to help the potatoes to soften a little quicker in the oven.
    3. Top the dish off with a little extra grated cheese and pop in the oven.
    4. Cooking time will vary depending on the size of your dish but around 1 hour is a good guideline. All ingredients should be cooked and lightly browned; the potatoes will be soft and the cheese well melted.
