Carrot Banana Cake

    This is a delicious and fruity cake that will keep moist for several days. It combines banana, carrot and walnuts in creating a wholesome, family friendly cake.

    Serves: 6 

    • 1 1/4 cups (155g) plain flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 90g soft brown sugar
    • 30g (30g) walnuts, chopped
    • 2 small eggs
    • 1 ripe banana
    • 90g grated carrots
    • 90ml cooking oil
    • 1/2 teaspoon cinnamon, optional
    • 30g soft butter
    • 110g cream cheese
    • 90g icing sugar
    • 15g nuts, chopped, to decorate

    1. Sift flour, salt, baking powder and bicarb soda in a medium bowl.
    2. Add sugar, walnuts and cinnamon.
    3. Add eggs, mashed banana and grated carrots.
    4. Beat mixture then add oil stirring briskly. At this stage mixture may seem runny but this is ok. It is more like a batter than a normal cake mix.
    5. Place mixture in a lined, greased 20cm sponge tin.
    6. Bake in the centre of oven at 180 degrees C for 40 minutes until well risen and firm to touch.
    7. Mix butter, cream cheese and icing sugar to make icing.
    8. When cool split the cake and place icing in the middle and on the top of the cake. Add nuts to decorate.

    Yummy!! made it for the first time yesterday!! I made mix into a 2 pound loaf. I left out walnuts. I didn't ice it because I had no cream cheese. It's so nice I had to make a second one today!
