Here is my mum's Christmas Pudding recipe. I know it's always a bit hot to think about this kind of thing at Christmas but once you taste this you know it will have been worth it!
Place all dry ingredients in a bowl and stir to combine. Add the milk and then the eggs one at a time, stirring, then the rum and lemon juice. Stir to combine well.
Place the mixture in a well greased pudding mould or a greased and floured pudding cloth.
Boil for about 4 hours, or steam for 5 hours. Serve with custard or brandy sauce for a delicious Christmas pudding.
Suet
Try to get suet from a butcher or use the packet mix suet sold in most large supermarkets. You can also substitute with butter.
