Here is my mum's Christmas Pudding recipe. I know it's always a bit hot to think about this kind of thing at Christmas but once you taste this you know it will have been worth it!

Serves: 10

  • 225g chopped or grated suet
  • 1/2 cup (60g) plain flour
  • 2 3/4 cups (420g) sultanas
  • 3/4 cup (125g) mixed peel
  • 1/2 a whole nutmeg, freshly grated
  • 1/2 tablespoon mixed spice
  • 1/2 tablespoon cinnamon
  • 2 cups (250g) dried breadcrumbs
  • 2/3 cup (90g) currants
  • 2/3 cup (60g) desiccated coconut
  • 1 pinch salt
  • 2/3 cup (170ml) milk
  • 4 eggs
  • 1/2 cup (125ml) rum or brandy
  • 1 lemon, zested and juiced

Preparation:30min  ›  Cook:5hours  ›  Ready in:5hours30min

  1. Place all dry ingredients in a bowl and stir to combine. Add the milk and then the eggs one at a time, stirring, then the rum and lemon juice. Stir to combine well.
  2. Place the mixture in a well greased pudding mould or a greased and floured pudding cloth.
  3. Boil for about 4 hours, or steam for 5 hours. Serve with custard or brandy sauce for a delicious Christmas pudding.

Try to get suet from a butcher or use the packet mix suet sold in most large supermarkets. You can also substitute with butter.
