Baked Egg and Bacon Cups

    This is a different presentation of bacon and eggs, the bacon forms the shell and egg cooks inside. An easy idea for brunch.

    Serves: 3 

    • 3 teaspoons butter, melted
    • 3 rashers bacon
    • 3 eggs
    • 1 1/2 slices cheese

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 180 degrees C. Fry the bacon in a frypan so the rashers are brown but still soft.
    2. Place 1 bacon rasher around the sides of a muffin cup or ramekin. Repeat with remaining 2 rashers. Add 1 teaspoon of melted butter to each cup, then crack 1 egg in each.
    3. Bake in a 180 degrees C preheated oven for 10 to 15 minutes. During the last couple minutes of baking, top each with cheese and continue to cook until the cheese is melted.
