Mascarpone and Lime No-Bake Cheesecake

A different kind of cheesecake recipe. Instead of using a lime you can use an orange or lemon. You can also use gingernuts for the base.

Added vanilla instead of lime and topped with mixed berries -Made a pastry base with plain flour, egg, sugar, vanilla and butter My family loved it.

Great recipe. I added extra sugar as it was a bit to sharp for my taste. Used chocolate digestives and chocolate chip cookies for the base. Yummy!

Really easy and delicious. I have doubled the ingredients and put it in an 8" loose bottomed cake tin.

The filling was not enough for the 20 cm round.. Other than that it was great. I actually used banana instead of the boring lemon.

This was the first time i've ever made a cheesecake from scratchWhen i first tasted it the 'limey' taste took a bit of getting used to,but the more of it i ate the more i liked it,it was nice and tangy!I served it with single cream which tamed down the limey flavour!For my first home made cheesecake this wasn't bad at all!
