Mascarpone and Lime No-Bake Cheesecake

A different kind of cheesecake recipe. Instead of using a lime you can use an orange or lemon. You can also use gingernuts for the base.


Serves: 4 

  • 100g plain sweet biscuits, crushed
  • 30g butter, melted
  • 250g Mascarpone cheese
  • 20g icing sugar
  • 1 lime, zested and juiced
  • 1 kiwifruit, peeled and sliced

Preparation:25min  ›  Extra time:30min chilling  ›  Ready in:55min 

  1. Melt the butter then stir in the crushed biscuits. Press into the base of a small flan or quiche tin.
  2. Place the Mascarpone, icing sugar, lime zest and juice into a mixing bowl and beat well together. Spread over the biscuit base and chill for at least 30 minutes.
  3. Remove the cheesecake from the fridge and decorate with kiwifruit.
