Hokey Pokey Ice Cream

    Hokey Pokey ice cream is the best ever ice cream! This one is an adults version with a little vodka - though you could easily make it without.

    Serves: 8 

    • 1/3 cup (90g) caster sugar
    • 2 tablespoons (60g) golden syrup
    • 2 tablespoons bicarbonate of soda, sifted
    • 600ml thickened cream
    • 1 tin (395g) condensed milk
    • 1 1/2 nips (45ml) vodka

    1. To make the honeycomb, heat the caster sugar and golden syrup in a heavy bottomed pot over medium heat until the sugar melts and caramelises.
    2. Add the sifted bicarbonate of soda and stir well when it starts to bubble. Pour the mixture onto a greased baking tray and allow to cool in the fridge.
    3. To make the ice cream, whip the cream until it has soft peaks and has doubled in volume. Fold in the vodka and condensed milk and whisk until firm.
    4. Break up the honeycomb and it mix well into the cream mixture.
    5. Pour it all into a container and freeze for at least eight hours, stirring ever hour or so to keep it smooth. If you have an ice cream maker you can use that too - just follow the instructions.
