Put any leftovers you may have in a food processor & roughly blend.
Put into a bowl and then mix in the beaten egg.
Cover hands in flour and form into patties.
Heat olive oil and fry the patties in moderately hot oil for approx 8 minutes each side.
Serve in warm rolls with garlic mayonaise.
To make the garlic mayonaise:
Crush the garlic & mix with the chopped parsley and mayo - this is best refrigerated for at least an hour before use
My brother is a big 'leftover burgers' fan and uses virtually any leftovers including takeaways and roast dinners. Add a dash of tabasco or some chillies to pep it up a bit! Its not gourmet: but always tasty!
