    An easy light dinner for Christmas night or perfect Boxing Day lunch. Turkey in a rocket salad with a tangy Thai chilli dressing.

    Serves: 2 

    • 2 tablespoons Thai fish sauce
    • juice of half a lime
    • juice of half an orange or lemon
    • 2 1/2 cm fresh ginger, peeled and grated
    • 4 dried red chillies, crushed (or to taste)
    • a few drops of sesame oil
    • salt and black pepper
    • 450g turkey leftovers
    • a bag (120g) of mixed salad (a rocket mix is good)

    1. Whisk the fish sauce, lime juice, lemon/orange juice, ginger, chillies and sesame oil in a bowl. Season to taste with salt and black pepper.
    2. Slice or shred the turkey meat and toss with the salad leaves.
    3. Pour over the dressing, toss again and eat!
