Turkey Pate (made from leftovers)

    This is an excellent dip made from leftover turkey mixed with cream, sherry and herbs. You couls also try it with chicken (though I haven't!) Serve with crackers.

    Serves: 4 

    • 440g cold cooked turkey
    • 1 large onion, chopped
    • 90g butter
    • 4 tablespoons (80ml) cream
    • 2 tablespoons dry sherry
    • chopped parsley
    • salt and black pepper
    • lemon (as a garnish)

    1. Melt the butter in a saucepan, add the onion and fry until transparent. Remove pan from the heat and stir in the turkey meat.
    2. Place the mixture in a food processor and blend till finely chopped.
    3. Add the cream, sherry and salt and pepper and mix til smooth.
    4. Place the mixture into a serving dish and chill in the fridge for at least 3 hours.
    5. To serve, sprinkle with chopped parsley and place a lemon slice twist on top.
