Lamb potato bake

Be the first to make this!

This is a good sized lamb potato bake that will give you a meal for one plus lunch. This potato bake can also be made with beef.

Serves: 1

  • 2 small lamb steaks
  • 6 to 7 potatoes, peeled and sliced
  • 1 onion, chopped
  • oil for frying
  • 2 stock cubes (lamb if you can get hold of)
  • 2 teaspoons gravy powder e.g. Gravox
  • 2 knobs of butter
  • Optional additions
  • 1 carrot
  • handful of peas
  • other vegetables
  • salt and pepper to taste

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour

  1. Firstly, dice the lamb making sure to cut off all excess fat. Boil the potato slices for about 10-15 minutes.
  2. Put a splash of oil into a deep frying pan for the lamb (preferably a deep frying pan). Place the lamb cubes in the frying pan (all at once) along with the onions. Stir the lamb and onions until golden brown... at this point add the vegetables and the two stock cubes, with approximately 500ml of water and a couple of teaspoons of Gravox. Allow to simmer.
  3. Drain the potatoes. Grease a small pyrex dish or baking dish, place a layer of the potatoes on the bottom. Drizzle melted butter over the potatoes.
  4. Pour the lamb mixture over the potatoes, then lay the rest of the potato slices over the top of the lamb (it may get a little bit messy) then drizzle the second knob of melted butter over the top layer of the potatoes.
  5. You can place this in the fridge if you wish to bake later; otherwise put into a preheated oven on 180 C for 45 to 60 mins or until the top layer of potatoes is golden brown.
  6. Serve on its own and enjoy. This recipe can also be done with beef.
