Jam Centred Muffins

    Surprise! there is jam in the middle of your muffin. These muffins are simple to make and moist to eat. Everyone loves the jam in the middle.

    Serves: 12 

    • 1 3/4 cups (210g) plain flour
    • 75g caster sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 2 eggs
    • 160ml skim milk
    • 5 tablespoons butter, melted
    • 1 teaspoon grated lemon zest
    • 8 tablespoons raspberry or strawberry jam

    1. In a large bowl combine flour, sugar, baking powder and salt.
    2. In a small bowl whisk eggs then add milk, butter and lemon zest. Pour into dry ingredients and stir just until moistened; don't over mix otherwise your muffins won't rise properly.
    3. Spoon 1/2 of the muffin mixture into 12 muffin cups lined with muffin cases. Make a well in the centre of each; spoon in jam. Spoon remaining batter over jam.
    4. Bake at 200 degrees C for 20-25 minutes or until golden.

    Used different ingredients. I used lingonberry jam instead because I wanted to try something different  -  19 Apr 2011


    Altered ingredient amounts. This looks tempting,will be trying soon with strawberry jam or home made tomato jam.  -  13 Jun 2011


    I followed the recipe, the part where it said not to mix thouroughly. When they were baked, the taste and the look of them was terrible.  -  19 Apr 2011
