Hot Chocolate Cake

    Hot milk is poured into the chocolate and flour mix to create this moist cake. My kids love to get in on the act by decorating with additional chocolate.

    Serves: 10 

    • 1 cup (220g) caster sugar
    • 3 eggs
    • 1 cup (125g) plain flour
    • 3 teaspoons baking powder
    • 3 tablespoons cocoa powder
    • 1 pinch salt, to taste
    • 1 teaspoon vanilla essence
    • 1/2 cup (125ml) milk
    • 1 tablespoon butter
    • 60g choc chips or chopped nuts, optional

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cream the sugar and eggs until pale.
    2. Add the sieved dry ingredients and the vanilla essence and mix together.
    3. Put the milk and butter into a saucepan and melt the butter; don't let the milk boil once it starts to go bubbly around the edges, take it off the heat.
    4. Pour it into the rest of the mixture and beat it until there are heaps of air bubbles. Add your choc chips or nuts, if using.
    5. Pour it into two sponge tins and bake at 200 degrees C for about 15 - 20 minutes.
    6. Ice as desired but especially yummy with chocolate fudge icing.
