Chicken is sweetened by the honey and lemon then spiced up with English mustard. Baking in the oven maintains the chicken juices and allows the flavours to develop.


Serves: 4 

  • 2 chicken breasts
  • 2 tablespoons honey, to taste
  • 2 tablespoons English mustard, to taste
  • 2 tablespoons lemon juice, to taste
  • 2 serves seasonal vegetables, ready to serve
  • 2 baby potatoes, cooked and quartered

  1. Preheat oven to 200 degrees C.
  2. Mix the honey, lemon and mustard together in a bowl. Taste and adjust to get your desired flavour.
  3. Brush or roll chicken in marinade to fully coat both sides.
  4. Place chicken on greased baking tray then into the oven for 20-30 minutes.
  5. When chicken has 10 minutes left add potatoes to baking tray and drizzle over leftover marinade.
  6. Serve chicken with the potatoes and seasonal vegetables.
