I love to make my own curry powder mixes, there is something rewarding about the process. This recipe is for Garam Masala.


Serves: 30 

  • 1 whole nutmeg
  • 1 teaspoon whole black peppercorns
  • 2 cardamom pods
  • 1 teaspoon whole cloves
  • 1/2 teaspoon mace
  • 5cm piece cinnamon
  • 10 bay leaves

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Preheat the oven to 230 degrees C.
  2. Crush nutmeg into small pieces. Toss with the remaining ingredients and scatter on a baking tray. Place in the oven and cook for 5 to 10 minutes, until fragrant (watch carefully so it doesn't burn). Remove from the oven and let cool.
  3. Place all of the spices in a food processor or spice grinder and grind to a fine powder. Store in an airtight container.
