This recipe produces a pure coconut puree that can be used on toast, in Indian dishes or cakes. So simple but very effective.
2 1/3 cups (220g) unsweetened desiccated coconut
- Place the coconut into the bowl of a food processor. Blend for 10-12 minutes or until smooth, scraping down the bowl if and when necessary.
- Store in a jar at room temperature. The coconut butter will solidify at room temperature. When you need to use it gently heat it in a water bath or microwave.
