Brandy with Apricot

    Brandy and white wine is infused with apricots to create this relaxing drink. Additional sugar is included to sweeten the deal.

    Serves: 20 

    • 450g dried apricots
    • 1 (750ml) bottle white wine
    • 225ml brandy
    • 400g sugar

    1. In a glass container combine apricots, wine, brandy and sugar; stir well.
    2. Cover tightly and set aside at room temperature for at least a week to allow flavours to develop; stir occasionally for the first few days until sugar is dissolved.
    3. Remove fruit after 2 weeks and store in refrigerator. Brandy is ready to drink in 3 weeks. Shake before pouring.
