Potato Soup

    This simple potato soup is creamy, thick, tasty and healthy. I prefer to keep mine chunky but you can mash or blend if desired. Use fresh herbs if you have them.

    Serves: 5 

    • 2 medium potatoes, peeled and diced
    • 500ml water or veg stock for more flavour
    • 1 large onion, diced
    • 60g butter, cubed
    • 1/4 cup (30g) plain flour
    • 1 pinch salt, to taste
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon dried rosemary
    • 1/4 teaspoon pepper
    • 1 1/2 cups (375ml) milk

    1. Place potatoes and water in a large saucepan; cook over medium heat until tender.
    2. In another saucepan, saute onion in butter until tender. Stir in the flour, salt, thyme, rosemary and pepper.
    3. Gradually add milk. Bring to the boil; cook stirring for 2 minutes.
    4. Add potatoes with cooking liquid; heat through. You can mash the potatoes with a potato masher or leave them in bigger pieces.

    Just about to try this soup I making for me and my boyfriend, didn't have any bay leaves but still, I think it tastes nice with the Rosemary and Thyme.
