Who said BBQ couldn't be healthy? These turkey kebabs are a delicious low fat meal for summer. I serve this with a green salad and brown rice.
200g turkey breast, cut into cubes
1 lemon, juiced
1/2 teaspoon chilli flakes
1 clove of garlic, crushed
1 pinch, salt and pepper, to taste
1 red capsicum, diced
2 tomatoes, diced
- Place the turkey into a bowl. Mix together the lemon juice, chilli flakes, garlic, salt and pepper then pour over the meat. Leave to marinade for at least 20 minutes.
- When the turkey has marinaded take 4 large skewers and thread the turkey, tomatoes and capsicum onto the skewers.
- Grill or BBQ until the meat is cooked through; 10-15 minutes.
