Turkey Kebabs

    Who said BBQ couldn't be healthy? These turkey kebabs are a delicious low fat meal for summer. I serve this with a green salad and brown rice.

    Serves: 2 

    • 200g turkey breast, cut into cubes
    • 1 lemon, juiced
    • 1/2 teaspoon chilli flakes
    • 1 clove of garlic, crushed
    • 1 pinch, salt and pepper, to taste
    • 1 red capsicum, diced
    • 2 tomatoes, diced

    1. Place the turkey into a bowl. Mix together the lemon juice, chilli flakes, garlic, salt and pepper then pour over the meat. Leave to marinade for at least 20 minutes.
    2. When the turkey has marinaded take 4 large skewers and thread the turkey, tomatoes and capsicum onto the skewers.
    3. Grill or BBQ until the meat is cooked through; 10-15 minutes.
